HEALTHY BANANA PANCAKES


Now you can have your pancakes and eat them too - Guilt Free! I love this recipe because it’s gluten free and dairy free, making the pancakes light in calories and allergy friendly. These banana pancakes are super easy to make, just toss the ingredients in a blender and cook. The best part…they’re dog friendly! So you can share them with your furry best friend.


WHAT YOU’LL NEED:

1 ripe banana

2 eggs

3/4 cup rolled oats

Optional: Add 1tsp cinnamon

DIRECTIONS:

1. Add all the above ingredients to a blender and blend until smooth.

2. Heat a lightly oiled nonstick pan over medium heat (I like to use coconut oil).

3. Pour about 1/4 cup of the batter onto the pan. Wait until bubbles begin to form (about 1-2 minutes) then flip and cook for another few minutes or until bubbles form. Repeat this step until the batter is gone. Makes about 4-6 pancakes.

4. Serve with berries, peanut butter, honey or any topping of your choice :)
