V.I.P. BACON PUPCAKES



We’re getting ready to celebrate lil Luca turning one and it's not a party without pupcakes. When it comes to birthdays, I usually go the cake route, but I wanted to do something different for Luca. Just like Vito has his own bacon cookies, I decided to create a special recipe for Luca too.

If your fur baby has a birthday coming up (or if you want to show them some extra love), this recipe will have them drooling with joy. These pupcakes are made with all natural ingredients - peanut butter, greek yogurt, banana and most important BACON! What better way to spoil your dog on his or her birthday, gotcha day or just because dogs are awesome day - which is everyday right?!


V.I.P. BACON PUPCAKES

*V.I.P. - Very Important Puppy


Ingredients:

1/3 cup oat flour

1/4 tsp baking powder

1 ripe banana

1/2 peanut butter

3 tbsp plain greek yogurt

1 egg

1/2 tsp honey

1/3 cup finely chopped bacon

2 extra slices for decorating

Directions:

1. Preheat oven to 350 degrees. Line mini cupcake pan with cupcake wrappers

2. Combine dry ingredients, oat flour and baking powder, in a small bowl

3. In a large bowl, mash up the banana

4. Add peanut butter, greek yogurt, egg and honey to the large bowl with the banana. Mix together until smooth

5. Stir in dry ingredients, oat flour and baking powder, as well as the chopped bacon and mix until a batter is formed

6. Spoon and divide the batter evenly into your prepared cupcake pan

7. Bake until a toothpick inserted into the center comes out clean, about 10-12 minutes

8. Allow to cool and then decorate with peanut butter frosting (recipe below)


PEANUT BUTTER FROSTING

1/2 cup peanut butter

1/2 greek yogurt


Whip two ingredients together, until evenly combined. Then frost and decorate as desired. For Luca’s pupcakes, I used a piping bag to add the frosting and for a final touch I topped each off with a small piece of bacon.
